A creamy, cheesey and thick chowder using fresh (or frozen) vegetables. This is a VERY popular recipe at my blog and among my friends and family. When I'm in a hurry, I substitute frozen mixed vegetables for the fresh. This is the dish I most often make to take to grieving or sick families.

Cheesey Chicken Chowder

3 cups chicken broth ( reduced sodium )
2 cups potatoes ( diced, peeled )
1 cup carrots ( diced )
1 cup celery ( diced )
1/2 cup onion ( diced )
1 teaspoon salt
1/4 teaspoon black pepper
1/4 cup butter
1/3 cup all-purpose flour
2 cups milk
2 cups shredded cheddar cheese ( we prefer 1-1/2 cups velveeta )
2 cups chicken light meat ( diced, cooked )
