Easy Pumpkin Pie

2 cups diced toast bread
2 eggs
½ cup milk
½ teaspoon ground cinnamon
2 cups cooked pumpkin flesh
½ tablespoon maple syrup (optional)
1 tablespoon chopped walnuts (optional)

In a large bowl, mix eggs, milk and cinnamon until evenly combined. Pour into a blender, add pumpkin and mix.
Prepare a baking dish and fill the bottom with toast bread.
Pour the pumpkin mixture over the bread, pressing with a spoon until all bread is covered. Cover dish and Refrigerate overnight.
The next morning, preheat the oven to 350 degrees Fahrenheit.
Open the baking dish and bake for 35-45 minutes, or until golden and not squishy.
Cut into small pieces and serve, topped with optional maple syrup or/and sprinkle some chopped walnuts.
