Peach and Zucchini Salad

A NO COOK salad/side dish to go along side any of your grilled meals. Make it a true no cook meal by serving along side a pre-cooked chicken breast. Perfect dish for using up summer's delicious bounty!

3 T olive oil
1.5 T white wine vinegar
2 peaches, sliced
1/2 red onion, diced
1 zucchini, shaved into paper thin slices
6 oz. canned corn, drained
2-3 fresh basil leaves, sliced thin
1/4 tsp salt
1/8 tsp black pepper
1.In a small bowl whisk together oil, vinegar, onion, salt and pepper. 2.Place peaches, zucchini, corn and basil in a larger bowl. Pour vinegar mixture over everything. Toss gently to coat everything. 3.Serve.
