String Bean Stew Shrimp

2 tbsp. coconut oil
4 garlic cloves, chopped
1 onion, sliced
1 tsp. ginger root, grated
½ lb. shrimp, shelled
2 tbsp. fish sauce
1 lb. squash, cubed
½ cup string beans, julienned
1 cup coconut milk
Pepper and salt to taste
In a wok over medium high heat, heat the coconut oil, then stir in the garlic and onions. Stir-fry for a few seconds before adding the ginger root and shrimp. Continue stir-frying for about 3 minutes more....
