The Best Taco Pie

Like a Mexican version of chicken pot pie, this Taco Pie is a fun twist on a favorite family dinner! Meat, seasonings, corn, and peppers are topped with cheese and a cornbread crust for an easy weeknight supper.

1 lb. ground beef
½ c. diced onion
1 (1 ounce) packet taco seasoning mix
1 red bell pepper, finely chopped
1 (4 ounce) can chopped green chiles
½ cup fresh or frozen corn kernels
1 ½ cups shredded Mexican 3-cheese blend
1 (8.5 ounce) pkg. corn muffin mix
1 egg
½ cup milk
