All Natural Cool Cucumber Vanilla Muffins

I've had the idea of making cucumber something for so long. The thought of cool cucumbers straight out of the fridge made me want to interpret that into a delicious baked good and so I did.

2 cups white whole wheat flour ( minus 1/8 cup )
1/8 cup tapioca starch or corn starch
2 tsp baking powder
1 tsp baking soda
1 cup buttermilk
1/4 cup flavorless oil such as ( coconut oil, vegetable oil, canola oil)
3/4 cup turbinado sugar or granulated sugar of choice
1 large egg
1/4 teaspoon salt
2 teaspoons vanilla extract
1 cup grated cucumber ( strained )
1. Preheat your oven to 375 degrees Fahrenheit. 2. In a medium sized bowl, add in your flour, starch of choice, baking powder, baking soda, salt, and sugar of choice. Stir to combine. Then set aside 1/4 cup of this mixture. 3. In another medium sized bowl add in your vanilla, egg, buttermilk,and oil of choice. Stir to combine. 4. Combine the 1/4 cup mixture from step 2 in a bowl with your grated cucumber. 5. Combine your wet ingredients into your dry ingredients. Stir to combine, but be careful not to mix too much. 6. Now, fold in your cucumber mixture with a rubber spatula. Scoop 1/4 cup mixture into your muffin liners. 7. Bake at 375 degree F for about 20 minutes. Be sure to check on them and use the toothpick method to ensure that they are done.
