1 cup uncooked brown rice (or 2 cups cooked)
¾ cup chopped carrots
½ tablespoon canola oil
1 small onion, diced
1 small bell pepper, diced
2 cloves garlic, minced
2 tablespoons low-sodium soy sauce (or more, to taste)
1 ½ cups frozen peas
