Anime Style Onigiri

Any hardcore anime fan knows what this is. The little or big rice patty stuffed to the brim with meat or fruit. Today I will give you the recipe for Chicken filling Onigiri that my children love!

FOR THE FILLING
1 lb. chicken
1/4 cup soy sauce (Kikkoman preferred)
2 tbs. sugar
1/4 cup water
1/2 cup diced onion
1 clove, minced
salt and pepper to taste
FOR RICE
3 cups Sushi Rice
6 cups water
1/4 cup Rice vinegar
2 tsp sugar
1 lb. chicken
1/4 cup soy sauce (Kikkoman preferred)

FOR RICE
3 cups Sushi Rice
6 cups water
1/4 cup Rice vinegar

FOR FILLING
First, Saute the onions and garlic in oil until browned. next, add chicken, water, soy sauce, and sugar. let simmer 10 min, flip. Cover and let simmer for 15 minutes or until cooked thoroughly. Now. add all contents into a processor and mince.
For rice. Boil rice and water until cooked. Next, add rice vinegar and sugar into a LARGE bowl and mix until no more sugar can be seen. Add rice. mix until sticky and no more liquid can be seen. You'll know it's done when all of the rice is coated and glossy.
TO MAKE
With a sandwich bag, cut one large portion of the corner. This will be your Shaping tool. one portion of rice, about a half cup into the bag. twist the opening until the rice is firm and packed. with a spoon, poke a hole in the botom center of the patty. add 1 spoonful of chicken and cover with rice. Pack again. Can be served with or without sliver of sushi wrap. You know it's done when you can pick up and it not fall apart. ENJOY!
