Another Irish Meal in a Bowl, Baked Chopped

he initial “Irish Meal in a Bowl” was so popular with you all, I decided to make another version. Plus, it didn’t hurt that The Hubby asked for it again when we were entertaining friends last weekend. How could I refuse? I did tweak it a bit so that I’d have a new Irish Meal in a Bowl. This one has more protein and a couple of different veggies that I’m sure you’d see on a farmhouse table in Ireland.

Bowl/Baking Sheets Ingredients: Chop all into 1 inch uniform pieces.
1 Tablespoon Olive Oil
1 cup Chopped Zucchini
1 cup Chopped Carrot
1 cup Chopped Turnips
1 Red Bell Pepper, seeded and Chopped
1 Fennel Bulb, Chopped
3 cups Chopped Cauliflower
1 Red or Brown Onion, Chopped
3 cups Chopped Red Potato
1 teaspoon Thyme
1 teaspoon Dried Sage
1 teaspoon Kosher or Sea Salt.
1/2 teaspoon Freshly ground Black Pepper

Bowl/Sauce Ingredients:
1 cup Tomato Sauce, bottled or homemade
1 15 oz. can diced tomatoes, w no salt added
8 oz. Chopped, Sliced Deli Corned Beef. Of course you can use homemade!
1/2 cup Frozen Peas. You don’t even need to defrost them
1 cup Sauerkraut, drained and Chopped
4 oz. Grated White Cheddar Cheese. I used Irish Dubliner. Reserve 1 oz. for topping
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Stone Ground Mustard

Zing Factor: For it’s Stealthy/Healthy anti inflammatory properties
1 Teaspoon Turmeric
Bowl/Baking Sheet Prep: Chop’em and Drop’em as directed into a Large Bowl. Stir all ingredients together to coat with the oil, herbs and spices. Pour half on one baking sheet and half on another. Roast in...
