Apricot Chicken Legs (take on chicken l'orange)

Julia Child made Chicken L'Orange popular back in her day. Well Julia Child, I am not. But I'll tell you this, I took her basic recipe and made a few changes of my own and this is delicious. Even if you are not a fan of chicken legs you could easily substitue a different cut of chicken. Super easy and super delicious. Pairs well with green beans and rice.

8 shallots, peeled and halved (large ones should be quartered)
2 T olive oil
6 chicken drumstricks or legs or thighs
1/2 C apricot marmalade (or orange)
1 T white wine vinegar
1 T herbs de provence
1/4 tsp each kosher salt and fresh black pepper
