Arroz con Gandules: Rice with Pigeon Peas

Arroz con Gandules is a PuertoRican favorite and the accompaniment to many meals. However, it is also popular in other Latin American countries. As an added plus, arroz con gandules goes amazingly well with bistec encebollado. Gandules or Guandu depending on where you are from, are a small roundish bean that grows in a perennial bush. There are three different types of gandules (aka guandu): black, green and striped.

2 cups long grain white rice
2 cups of water
1½ cups chicken stock
1 tsp. sazon
1 small onion diced
¼ cup slab bacon diced
½ tsp. salt
1 15.5 oz. can of gandules (pigeon peas)
1 Tbsp. olive oil
1 Tbsp. chopped parsley for sprinkling
*Note: To make this recipe vegetarian, omit the salt pork and substitute the chicken stock for vegetable stock. Also if vegan, increase the amount of olive oil by ½ Tbsp.
