Asian Eggs Benedict

An asian-spin on the classic Eggs Benedict! I grew up eating Spam with eggs and rice and thought the flavors combined could make a unique and tasty eggs benedict. With the sriracha-hollandaise, a nice and spicy kick is added!

Ingredients:

1/2 cup cooked rice
2-3 slices of SPAM, sliced thinly
4 eggs
2 sprigs green onion, diced
salt and pepper taste
2 tsp. oil

for the sriracha hollandaise:
2 egg yolks
3 tbl. butter, melted
2 tsp. sriracha
1 tbl. fresh lemon juice
