Aunt Freda's Best Bran Muffins

Yummy! My Aunt tried many different recipies looking for the best one. I have adapted it to be more diabetic friendly and it is still yummy!

1 cup chopped dates (soften in microwave 30 sec then chop)
2 teaspoons baking soda
1 teaspoon salt
1/2 cup brown sugar
1/2 cup Splenda
2 cups wheat bran
4Tablespoons coconut oil
2 cups boiling water
2 eggs
1 cup whole wheat flour
1 cup white flour
2 teaspoons baking powder
2 teaspoons baking soda
1 teaspoon salt

1 cup whole wheat flour
1 cup white flour
2 teaspoons baking powder
Add first 8 ingredients to mixing bowl, stir and let cool.
Then add eggs, flours and baking powder. Mix well and put into 24 sprayed or paper lined muffin tins.
Heat oven to 350 degrees and bake for 20 min. on convection or a little longer on regular.
