Aunt Mable's Zucchini Bread

My aunt Mable was a wonderful country cook. I looked forward to visiting her and especially eating at her house. They always had fresh veggies from the garden. Right now I have lots of zucchini from my garden, so that made me think of this great recipe.

3 large eggs
2 cups sugar
1 cup oil
2 cups zucchini, grated
3 teaspoons vanilla
3 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
3 teaspoons cinnamon
1 cup nuts, chopped
Mix together: 3 large eggs, 2 cups sugar, 1 cup oil, 2 cups grated zucchini and 3 teaspoons vanilla. Combine the following and and add to above mixture: 3 cups flour, 1 teaspoon salt, 1 teaspoon baking soda, 1/4 teaspoon baking powder and 3 teaspoons cinnamon. Stir until well blended. Add 1 cup chopped nuts. Bake at 350 degrees for 1 hour. Cool on wire rack. Makes 2 loaves
