Avocado Chicken Salad

Healthy, delicious, and super easy chicken salad. Perfect for a BBQ, party, or snack. You can customize this recipe to include any veggies that you like, or take out the chicken for a yummy vegetarian dish!

2 large ripe avocados chopped
1 large Roma tomato chopped
1 Can black beans
1 Can corn
1/2 green pepper chopped
2 cups cooked chicken (I use canned chicken or a rotisserie chicken)
1/2 cup Ranch dressing
1/4 cup fresh cilantro
squirt of lime juice
dash of salt to taste
Chop up all the veggies then mix all ingredients in large bowl. Eat on a pita, with tortilla chips or on a sandwich.... however you prefer! Refrigerate leftovers for up to 24 hours
