For Salad
1/4 cup extra-virgin olive oil

2 Tablespoons soy sauce (I used low sodium)

1 garlic clove, minced

zest of one lemon

3 Tablespoons chopped fresh Italian parsley leaves

2 Tablespoons chopped fresh chives

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

16 ounce package of Extra Firm Tofu, drained and pressed (see notes for preparation tips)

1 medium zucchini, halved lengthwise

1 medium avocado, cut into 1/2-inch pieces

1 bunch of fresh large green lettuce leaves

For Dressing:
2 Tablespoons extra-virgin olive oil

2 Tablespoons fresh lemon juice (from 1 large lemon)

1 Tablespoon light agave

1 teaspoon Dijon mustard

1/4 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper
