My favorite make-ahead breakfast casserole. Perfect for brunch, breakfast, or breakfast-for-dinner!

12oz bacon, cooked and crumbled
4c diced potatoes
3 green onions, sliced
1c grated pepper jack cheese
1c grated cheddar cheese (I prefer sharp)
1/2tsp dry mustard powder
1/2 tsp salt
1/4 tsp pepper
3 eggs
1c milk
2 tsp olive oil, plus more if desired
