Bacon & Spinach Carbonara

I think that this particular recipe is great for fall, especially if you use a smoked bacon, and don’t be shy about swapping spinach for kale, it lends itself wonderfully to this recipe!

1 lb dried pasta
½ lb bacon, cut into ½ inch chunks
2 large eggs
1 cup Parmesan cheese
2 cups baby spinach leaves
