Baked Chicken Nuggets- A Healthy Alternative

Easy to make, great tasting, and way better for you than store bought or fast food nuggets! Plus they heat up in a snap, great by themselves or delicious in salads. This also makes great chicken strips instead of nuggets.

4 Chicken Breast
1 cup Corn Flakes (Crushed)
1 Egg
3 tbsp Milk
1 Cup Flour (White, or Whole Wheat)
1 tbsp Garlic Powder
4 tbsp Parmesan Cheese
Salt and Pepper
Cut chicken breast into cubes, roughly all the same size. Pour corn flakes into a zip bag, and crush. Add cheese to crushed flakes, shake to mix. Crack egg into a small bowl, add milk and mix. In another zip bag, or shallow dish, combine flour, garlic powder, salt, and pepper. Add a few pieces of chicken to the flour mix, shake to coat. Transfer to egg mixture, moving to coat entire piece. Finally place in bag of corn flakes and shake to coat. Place the coated nuggets on a cookie sheet lined with parchment paper. Repeat until you've used all chicken. Discard excess flour, flakes and egg wash. Bake 5-10 minutes until chicken is cooked thoroughly. This is a big batch of nuggets, freeze whatever you don't eat! After baking let cool, arrange on a cookie sheet and stick in the freezer. After an hour transfer to a zip bag and store. To reheat microwave or place back in the oven!
