1/2 cup Coconut Flakes (unsweetened or sweetened)
1/2 cup gluten free bread crumbs (or regular bread crumbs)
3 tablespoons gluten free flour (or All Purpose White Flour)
2 Large Eggs whites
12oz - 1 Lb Large Shrimp (uncooked, washed, peeled, deveined with tails still on)
1 pinch Salt and pepper
1 bottle Nonstick cooking spray
1 jar Orange or Mango Marmalade (use half the bottle if it is 18oz)
2 teaspoons Dijon mustard
2 tablespoons Orange juice (or freshly squeezed orange juice)

6 tbsp Mayonnaise
4 tbsp Milk
1/2 tsp Mastard
