Think of this dish as a Mediterranean Huevos Rancheros! There are many variations to this dish, with different spices, cheeses, herbs or even preserved lemons. The version here is the simple classic version and it is an absolutely fantastic brunch dish. You can do 90% of the work well ahead of time. The ingredients list is not set in stone. 2 Large Yellow Onion
2 Red Bell Pepper
2 Yellow Bell Pepper
4 tbsp Cane Sugar
1 tsp Ground Cumin
2 Bay Leaves
3 tbsp chopped Fresh Thyme Bunch
3 tbsp chopped Italian Parsley Bunch
1/2 tsp Cayenne Pepper
1/2 tsp Turmeric or Curry Powder
3/4 Extra Virgin Olive Oil
8 Organic Large Brown Eggs 1dz
2 Large Yellow Onion
2 Red Bell Pepper
2 Yellow Bell Pepper
4 tbsp Cane Sugar
