Take-out style Kung Pao Chicken with peanuts and peppers, baked instead of fried!

4 chicken breasts, cut into bite-sized pieces
Salt and pepper
3 eggs, beaten
1 1/2 cups cornstarch
1/4 cup canola oil
1/3 cup soy sauce
1/3 cup rice vinegar
1 tablespoon Sriracha sauce
1/2 teaspoon sesame oil
2 cloves garlic, minced
1/3 cup brown sugar
1 tablespoon cornstarch
1 red bell pepper, chopped
2-3 tablespoons chopped jalapeno
1/3 cup peanuts
