Healthy meets delicious with this Balsamic Glazed Mediterranean Chicken Bake! So flavorful, quick, and healthy!! Everything bakes together to bring out the best in all of the ingredients. Enjoy!

1½ lbs. chicken breast or thighs (boneless & skinless) (we used 4 chicken breasts)
1 14oz can or jar of marinated artichoke hearts
4 sprigs of fresh oregano, chopped
1 red onion, thinly sliced
1 pint grape or cherry tomatoes, left whole
1 14 oz. can white beans, drained & rinsed
1 small tub marinated bocconcini (cubed fresh mozzarella will also work)
1½ cup chicken broth
½ cup whole cashews

8 ounces wide egg noodles
5 tablespoons butter (unsalted)

2 1/2 cups milk (2%)
1/2 teaspoon onion powder
