Banana coconut rum upside down cake (gf)

Caramelized bananas pair beautifully with the warm spiced and the coconut rum! The kitchen bathes with the aromas of the baked bananas… Try to refuse a piece of cake like this!

FOR THE BANANA COCONUT RUM SAUCE
2 bananashalved lengthwise
1cup light brown sugar
1/2 tsp Ground Cinnamon
1/2tsp orange zest
1/4cup coconut rum
4tbsp Butter
FOR THE CAKE
3/4cup gluten free flour blend
2tsp Baking Powder
3 Eggs
1/2cup Sugar
1/2tsp Salt
4tbsp Buttermelted and cooled
1/2cup orange juice
1tsp Vanilla Extract
1cup shredded unsweetened coconut
