A light version of mac and cheese with a hint of basil. This recipe will challenge your cooking skills and help you feel very accomplished when you are munching on your delicious masterpiece!

12 oz corkscrew pasta
1 Tbs unsalted butter
1 medium shallot, finely chopped
2 Tbs all-purpose flour
1 tsp mustard powder
1/2 cup skim milk
1/3 cup low-fat sour cream
2/3 cup shredded part-skim mozzarella cheese
2/3 cup shredded low-fat swiss cheese
3 Tbs grated parmesan cheese
Freshly ground pepper
1/4 cup chopped fresh basil
