Bean's Gluten Free Pancakes

I created this recipe for my Daughter who LOVES pancakes but was very sensitive to the dairy and the heavier flours put in most pancake recipes. So I experimented and finally came up with what I think are the most delicious gluten free pancakes out there! I hope you enjoy!

Dry Ingredients:

1 Cup Brown Rice Flour
1/4 Cup Tapioca Flour
1/4 Cup Almond Flour
1/8 Cup Coconut Flour
1/2 tsp. Salt
1/2 tsp. Xanthum Gum
2 tsp. Baking Powder
2 Tbs. Flax Seeds

Wet Ingredients:
2 Eggs
2 1/2 Cup Coconut Milk
1/8 Cup Melted Coconut Oil
1 tsp. Vanilla
1. Mix dry ingredients together. 2. Add all wet ingredients to the dry mixture then mix until smooth with a whisk. 3. Use a non-stick pan or use a teaspoon of oil to the pan (for each batch) if it is not coated. 4. Cook until each side of the pancake is golden brown and the center is firm when pressed with a spatula.
