Becky's Gluten Free White Chicken Enchilada Casserole

This is yummy casserole that you can make mild or spicy, depending on the tastes of your family. My husband likes his food on the mild side, so there isn’t much spice in my version. You can add spicier enchilada sauce, pepper jack cheese, jalapeno, etc., to up the heat! Use corn tortillas and GF cream soup for a gluten free option. 7 boneless, skinless chicken thighs or an equal amount of chicken meat - cooked and shredded
26 ounces of GF condensed cream of chicken soup (make your own in a few minutes with the recipe from Salad in a Jar)
2 tsp of garlic paste or equivalent amount of fresh, dried or powdered garlic
1 tsp-1tbl of cumin, depending on your taste (optional)
1 cup sour cream
1 cup GF green enchilada sauce (mild, medium or hot!)
2 cans (14 ounces total) diced green chili peppers
12- 15 GF corn tortillas
4 cups of shredded cheese of choice (cheddar/jack, pepper jack, mexi blend, etc. Make sure pre-shredded cheese doesn't have a coating of wheat flour to prevent clumping!)
Black Olives (optional)
Chopped tomatoes (optional)
Chopped green onions - green part only (optional)

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
