A nice hearty beef stew the quinoa! The perfect comfort food for a cool rainy (or dare I say, snowy?) day!

1 tbsp extra virgin olive oil
¾ lb beef stew meat
1 onion, diced
2 cloves garlic, mined
1 (15 oz) can petite diced tomatoes, undrained
1 tsp ground cumin
½ tsp smoked paprika
¼ tsp black pepper
¼ cup cilantro, chopped
2 quarts low sodium beef stock
2 large carrots, peeled and diced
2 medium potatoes, cubed
1 cup quinoa, rinsed and drained
Salt and pepper to taste.
