Beefy Bacon Cheeseburgers

Cheeseburgers outside in! The cheese is encapsulated in the meat so when you bite into it the cheese stays melted and gooey. I use a very lean beef so to keep them moist I wrap two strips of bacon around them and then bake them in the oven on a rack.

2 lbs lean ground beef
1 tsp onion powder
1 tsp garlic powder
1/4 cup dried minced onions
1 Tbsp McCormick's Grill Mates (I use Molasses Bacon)
4 oz. sharp cheddar cheese, sliced into 8 even slices
1 lb bacon
Optional - additional McCormick's Grill Mate seasoning to sprinkle on top
Mix ground beef with spices. Separate into 4 even portions - 8 ounces each. Working with each portion individually; separate into 1/3 and 2/3 portions. Using a hamburger patty former** place the 2/3 portion into the press to form a patty with sides. Lay two of the cheese slices inside. Flatten the 1/3 portion by hand to lay on top and form a cap, covering the cheese completely. Pinch edges together. Lay one slice of bacon on top and wrap edges under, then lay another slice across in the opposite directions. Place on rack. Continue with other three portions until you have four completed burgers. Place rack with the four burger patties on a foil lined cookie sheet. Sprinkle with additional seasoning if desired. Bake in 425 degree oven for 30 - 40 minutes, depending on how done you like your burgers. I bake mine for 35 minutes which is about medium well. These can also be grilled on the BBQ. ** I found my Jucy Lucy patty former at Bass Pro, but I have seen them online also. Could be done by hand, just make sure the meat doesn't get too thin or the cheese will melt out while cooking.
