Best Ever Carrot Cake with Cream Cheese Frosting

Seriously the best, most amazing carrot cake I've ever made. Slightly adapted from the To-Die-For Carrot Cake Recipe at Mom on Time Out.

3/4 cup vegetable oil
3/4 cup vanilla Greek yogurt
2 cups sugar
3 eggs, whisked
1 tsp vanilla

2 cups flour
1 tsp baking soda
1 1/2 tsp baking powder
1/2 tsp salt
1 1/2 tsp cinnamon

2 cups grated carrots (mine were heaping, so likely closer to 2 1/2 cups)
1 cup sweetened shredded coconut
1 cup crushed pineapple in juice (not drained)

Cream Cheese Frosting:
1/2 cup butter (softened)
1 8oz package cream cheese (softened)
1 tsp vanilla
1 lb powdered sugar
