Best Ever Gluten-Free Buttermilk Pancakes

These protein-packed high-fiber pancakes are really fantastic and sure to be a family favorite!

1 ¼ cups garbanzo bean flour (chickpea flour)
½ teaspoon baking soda
½ teaspoon baking powder
1 tablespoon sugar
1 teaspoon salt
5 tablespoons unsalted butter, melted and cooled
1 large egg (separated)
2/3 cup buttermilk
1/3 cup milk
Canola oil
1. In a medium sized bowl stir together the flour, baking soda, baking powder, sugar, and salt to combine. 2. Whisk the egg yolk and butter together in a small bowl. Add in the buttermilk, egg white and milk whisking to combine. 3. Pour the wet ingredients into the dry ingredients, mix until it is combined. The batter should be lumpy and thick. 4. Over a medium heat, pour 1/4 cups of the pancake batter onto a greased griddle. Brown on both sides and serve hot with butter and syrup.
