Big Batch Granola

A versatile granola that my mom made when I was growing up. I have made it for my family for more than 30 years. It is a favorite for my college students to have in their dorm or apartment. It makes a lot, but the recipe can be halved.

8 cups quick oats
3 cups wheat germ
3 cups coconut
2 cups granulated sugar
1 teaspoon salt
1 cup raisins or other dried fruit
1 cup chopped nuts
1/2 cup oil
1 cup water
5 teaspoons vanilla
Mix dry ingredients together in large roasting pan. Mix wet ingredients separately and pour over dry ingredients. Stir to combine all ingredients. Bake at 275 degrees for 80 minutes or until browned. ...
