Boiled Peanuts Southern Style

It's a Southern thang!!! YUM, YUM, YUM!!! Nothing says summer in the South like having a cookout with boiled peanuts, watermelon, some kind of meat cooked on the grill and good friends and family hanging out! This recipe is super easy and DELICIOUS!! Give it a try and hope you ENJOY!!

4 lbs raw peanuts in the shell
3/4 Cup non-iodized salt
Large pot (6 qt or bigger)
Enough water to cover peanuts by about 2 inches ( you'll probably have to add water periodically during cooking process)
Wash peanuts and put in large pot with salt. Put enough water in pot to cover peanuts by about 2 inches. Bring to a rolling boil and then simmer for about 4 hours adding water as needed to keep peanuts covered in water. Drain Start eating RIGHT AWAY!! These are awesome right after they are done cooking, but you can refrigerate for 3 to 4 days
