Bread Salad with Grapes Blue Cheese and Light Ranch Dressing

Toasted bread cubes are mixed with grapes, arugula and blue cheese and tossed with a lightened Ranch dressing

For Dressing: (adapted from Fountain Avenue Kitchen recipe)
2 1/2 tbsp. low fat buttermilk
1 1/2 tbsp. 2% fat Greek Yogurt – I used Fage
1 1/2 tbsp. light mayo
1/2 tbsp. apple cider vinegar
1/2 tbsp. water
1/4 tsp. kosher salt
1 1/2 tbsp. minced chives

For Salad:
9 oz. Crusty bread loaf, cut into 1/2 inch cubes
Cooking Spray
1/2 tsp. kosher salt
1/4 tsp. garlic powder
Pinch Fresh Ground Black Pepper
1 cup grapes, halved
3 cups arugula
2 oz blue cheese, crumbled
