Breaded Tilapia parmesan is a delicious high-?protein, low-?carb, low-?sugar recipe. We loved this fish with Black Rice Quinoa pea salad and broiled Sour Dough French bread. A truly yummy meal. I’m stuffed!

4 fresh tilapia fillets
1 Cup crushed focaccia croutons
1 Cup Parmesan-freshly grated
1 tsp. Dill
1 Tablespoon parsley flakes
1 tsp. dry mustard

3 T unsweetened cocoa powder
Pinch salt
3 eggs
1/2 c salted butter
1/2 c light corn syrup
1 t vanilla extract
1 unbaked 9-inch pie crust

  1. Preheat oven to 350 degrees F. In a large bowl, whisk together sugar, cornmeal, cocoa and salt. Add eggs, melted butter, corn syrup and vanilla; mix well. Pour into unbaked pie crust.
