Butternut Squash Black Bean Burritos

Flavorful, filling, fantastic burritos!! After tasting these, you'll never want the classic burrito again!

1 medium butternut squash, peeled, cubed, & roasted
1.5 cups cooked brown rice
1-2 tsp olive oil
2 scallions, diced
2 garlic cloves, minced
1 bell pepper, diced {I used a green bell pepper.}
2 small jalapenos, minced {I left the seeds in for a little extra spice.}
1 tsp salt
2 tsp ground cumin
1/8-1/4 tsp cayenne pepper {optional}
1 (15-oz) can black beans, drained and rinsed
4-6 tortilla wraps (large or x-large) {Small corn tortillas also work for mini tacos.}
Toppings of choice: (avocado, salsa, spinach/lettuce, tomatoes, cilantro, etc)

In a large skillet over medium heat, add oil, scallions, and minced garlic. Saute for about 5 minutes, stirring frequently. Add in salt and seasonings and stir well.
