A delicious chicken chipotle soup served with avocado and white cheese. Perfect for those who like a little spice in their food.

12 Cups of Water
3 Medium Carrots (Sliced)
1 Chive Stalk (Diced)
3 Garlic Cloves (Minced)
4 Chicken Breasts (Skinless, Cubed) -OR- 6 Chicken Thighs (Skinless, Bone-In)
6 Teaspoons of Chicken Bouillon
1 Cup White Rice (Uncooked)
3-6 Chipotle Chillies
Side: (Prep Once Soup is Simmering)
1 Large Avocado (Sliced)
6-8 Ounces of Oaxaca Cheese (Cubed)
