Carrot-Apple Salad

A great addition to any potluck or barbecue, this simple, colorful side dish was made to be shared. Not to mention that it’s also healthy and 21 Day Fix approved!

Dressing:
•5 tbs fresh lemon juice (1-3 lemons, depending on size)
•6 tbs extra virgin olive oil
•1 tsp ground coriander

Salad:
•5 cups grated carrots (about 2 lbs worth)
•5 cups sweet apples, chopped small (3-4 apples, depending on size)
•1 1/2 cups chopped fresh cilantro
1.In a large bowl, whisk together the dressing ingredients until emulsified. Mix in the carrots, apples, and cilantro until fully combined. Easy peas-y!
