If you are looking for a healthy and easy side dish, this is the one to make. While I was waiting for my main dish to finish cooking, I could not stop sneaking my fork into this side dish and eating a good amount before my main meal was done. It is extremely flavorful and would pair well with just about anything!

1 lb carrots, peeled and sliced into thin rounds
1 small fennel bulb, cored and cut into slices
1/4 cup olive oil
1 teaspoon salt
1 tablespoon white wine vinegar
2 teaspoons raw honey
1/2 teaspoon smoked paprika
3 tablespoons hazelnuts, toasted and chopped

Preheat the oven to 400°.
