Cauliflower and Cheese Soup with Guinness

A lovely, creamy, cauliflower and cheese soup with a dash of Guinness to give it that added something. I like to serve this soup with dark rye bread and lots of butter.

1 head of cleaned cauliflower
4 cups of vegetable stock
12 oz shredded Cheddar cheese (I prefer sharp, but any kind works)
6 oz Guinness (the other half of the can is for you to drink)
Salt and pepper to taste
Scallions, parsley, or smoked paprika (optional garnish)
Boil the cauliflower in the stock. Once the cauliflower is soft, use a stick mixer and puree the cauliflower. Reduce the heat to low and add the shredded Cheddar stir occasionally until the cheese melts. Add the Guinness and stir. Check your soup and see if it needs any salt or pepper. Garnish with scallions, parsley, or smoked paprika Enjoy!
