Cherry and Mango Salmon

This salmon recipe is sweet, nutritious and delicious. You may never have thought of combining fish with fruit but this dish is refreshing, colourful and tastes fantastic. I’ve served it with delicious spiced sweet potato fries but you can also serve with cauliflower rice. I have 2 fantastic easy recipes here: simple cauliflower rice, turmeric cauliflower rice.

For the Salmon:
1 punnet of cherries, halved and stoned
2 fresh salmon fillets
3 tbsp of honey, or low fat syrup made from natural fruit extract
1 tbsp of orange peel, grated
1/2 tsp pepper, coarsely ground
1 ripe mango, peeled and chopped
A sprinkle of fresh basil
For the fries:
2 sweet potatoes
2 tsp. smoked paprika
2 tbsp. coconut oil
1 tsp. garlic powder
1 tsp. pepper, coarsely ground
1/2 tsp. cumin
1 punnet of cherries, halved and stoned
2 fresh salmon fillets
3 tbsp of honey, or low fat syrup made from natural fruit extract
1 tbsp of orange peel, grated
1/2 tsp pepper, coarsely ground
1 ripe mango, peeled and chopped
A sprinkle of fresh basil
For the fries:
2 sweet potatoes
2 tsp. smoked paprika

Preheat the oven to 450C.
Chop the potatoes into thin strips and mix the other ingredients for the fries together in a small bowl.
