Cherry Cheesecake Crepes

This recipe for crepes involves six simple ingredients to create a paper thin, light, and soft crepe and then it is stuffed with a creamy and slightly sweet cherry cheesecake filling.

For the Crepes:
1 cup oat flour
1/4 cup all-purpose flour
1 tsp baking powder
pinch of salt
1 tbls melted butter
1 flax egg (1 tbls flax meal mixed with 3 tbls water) or 1 egg (for a non-vegan)
2-3 tbls sugar
2 cups coconut milk
1 tbls vanilla

For Filling:
2 oz vegan cream cheese, room temperature (I use Tofutti brand)
1/4 cup vanilla yogurt (I used coconut milk yogurt)
2-3 tbls cherry preserves (low sugar)
