This hearty and comforting chicken mushroom stew will keep you and your family warm and satisfied in the autumn and winter!

1 lb. chicken breast, boneless, skinless, cut into bite-sized pieces
2 tablespoons olive oil, divided
1 small onion, chopped
1 leek, halved lengthwise and thinly sliced (white and light green part only)
1 stalk celery, diced
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
3 cloves garlic, minced
1 lb. button mushrooms, rinsed and sliced
¼ cup red wine
1 tablespoon tomato paste
2 tablespoons Worcestershire sauce
2 tablespoons water
1 tablespoon cornstarch
salt and freshly ground black pepper, to taste
chopped parsley, for garnish
