PREHEAT: Wok - Med-Hi. MAKES: 6 Servings

2 Chicken Breasts, slightly Frozen
1 Tablespoon Olive Oil
1 Cup Celery, chop
1 Onion, chop
1 Carrot, Julienne
1/2 Red Pepper, Julienne ( Opt. )
8 ounces Snap Peas, thaw ( Opt. )
5 ounce can Water Chestnuts, sliced, drain
5 ounce can Bamboo Shoots, drain
14 ounce can Bean Sprouts, drain
4 ounces Mushrooms, drain
1 Cup Chicken Broth
2 teaspoons Cornstarch
2 Tablespoons Soy Sauce
14 ounces can Mini Ears of Corn, cut in 3/4 in. pieces, drain ( Opt. )
Hot Cooked Rice
