These chicken Parmesan meatball subs are the easiest things to make on the planet and will take only half-an-hour to make…or less depending on how fast you are at shredding zucchini. :) I realize I’ve been on an Italian kick. I mean, I’ve made Pepperoni Pizza Pasta, Manicotti, Baked Zucchini Parmesan Crisps, French Bread (even though it says “French” it’s perfectly Italian), Italian Pasta Salad, and more. You’d think I was half Italian or something. Far from it. Just love the stuff.

1 pound ground chicken, 99% fat-free
½ teaspoon salt
½ teaspoon pepper
½ teaspoon dried basil
½ teaspoon dried oregano
1 small zucchini, grated
2 garlic cloves, minced
½ cup Panko bread crumbs
? cup Parmesan cheese, grated
1 egg, beaten
5 Hoagie rolls
4 ounces mozzarella cheese, sliced
¾ cups marinara sauce
½ teaspoon salt
½ teaspoon pepper
½ teaspoon dried basil
½ teaspoon dried oregano
