Chicken & Wild Rice Soup

A deliciously savory homemade chicken & wild rice soup with lots of flavorful veggies!

8 Tbsp. butter
1 medium yellow sweet onion, diced
1 1/2 Tbsp. jarred diced garlic
1/2 lb. fresh raw baby carrots, sliced
1/2 lb. fresh raw celery, ribs split & sliced
1 tsp. parsley
1/4 tsp. ground ginger
1/4 tsp. celery salt
1/2 tsp. Italian seasoning
1/2 tsp. rosemary, crushed
1 tsp. thyme, crushed
2 bay leaves
1 cup dry white wine
80 oz. (2 1/2 quarts) reduced sodium chicken broth
2 boxes (6 oz. each) Uncle Ben's Original Recipe Long Grain & Wild Rice
8 oz. fresh raw sliced mushrooms, chopped
1 rotisserie cooked whole chicken, deboned & diced
1 (10.5 oz.) can cream of chicken

2 bay leaves

2 boxes (6 oz. each) Uncle Ben's Original Recipe Long Grain & Wild Rice

1 rotisserie cooked whole chicken, deboned & diced
1 (10.5 oz.) can cream of chicken
Slice up the fresh, raw onion, carrots, celery & mushrooms, keeping mushrooms seperate.
Debone rotisserie cooked whole chicken & dice the meat.
In a large stock pot over medium-high heat, melt butter.
When bubbling, add the onion, garlic, carrots, & celery.
Also add in the parsley, ground ginger, celery salt,
Italian seasoning, along with the crushed thyme & crushed rosemary.
**TIP: I crush these 2 herbs by placing them inside a coffee filter folded in two
and press hard with the back of a metal spoon, working all the herbs.**
Stir all these veggies, seasonings & herbs into the butter,
& saute for 4 - 5 minutes, stirring occasionally.
Add the reduced sodium chicken broth, white wine, & bay leaves.
Add in both boxes of Uncle Ben's Original Recipe Long Grain & Wild Rice,
But ONLY 1 of the packets of rice seasoning!
(The instant rice version will not work in this recipe;
& if you use both of the seasoning packets, it will be too salty)
Stir well & bring to a boil.
Reduce heat to medium, cover & simmer for 20 minutes, stirring occasionally.
Add in the diced fresh mushrooms & diced, cooked chicken.
Stir to combine. Replace lid & continue to simmer an additional 15 minutes.
Add in the cream of chicken, blending well.
Remove from heat, fish out the bay leaves (discard them) & serve immediately.
This soup can be frozen.
