Chicken with Chinese Mushrooms

A Chinese stir fry that's so good and so authentic, your guests will think it came from a Chinese restaurant!

12-15 dried black Chinese Mushrooms (or shiitake mushrooms)
2 cloves garlic, chopped
1 2-inch pieceof fresh ginger, grated
2 large chicken breasts, pounded and cut into strips
3 tablespoons oyster sauce
2 tablespoon dark soy sauce
1 tablespoon light soy sauce
2 teaspoons Chinese rice wine or dry sherry
ΒΌ cup/60ml reserved mushroom soaking liquid or chicken broth
1 green onion/sping onion, sliced into rounds
vegetable oil
