This "recipe" is not so much a recipe as it is a method of making a great side dish to go with Mexican food. I pull this out of my hat when I need a quick, easy side dish for taco night. It is a great one for days you don't really want to think about sides. The only brain power required is to add up how many avocados you will need to feed the number of people you will be feeding!
