There is this already marinated store brand chicken at the grocery store that is so good, but it has all sorts of ingredients that aren’t necessary and there is so much sodium. I decided to make my own recipe and then I added the chipotle to it too, since we love a bit of spice. Feel free to adjust the chipotle powder to the heat you prefer. For example, there is this Chipotle Lime Chicken Salad with rice and black beans that we usually double or triple the chipotle powder. In my Chipotle Lime C

1 lb Chicken Breast
juice of 4 small limes
½ t cumin
1 t dried chipotle pepper
¼ t onion powder
3 T olive oil
2 handfuls chopped fresh cilantro

3 T olive oil
2 handfuls chopped fresh cilantro
Add all the ingredients into a dish or freezer bag and marinate overnight.
Bake at 400? for 25 minutes or until done, great for grilling too.
