Chipotle Lime Chicken Triangles

We have tortillas at least a couple times a month with our meals, so I decided to go with some of my favorite flavors.

1 lb Chicken Breast
juice of 4 small limes
2 limes cut into eighths for squeezing
½ t cumin
¼ t dried chipotle pepper
¼ t onion powder
3 T olive oil
2 handfuls chopped fresh cilantro
Fresh cilantro for garnishing
15 oz can drained and rinsed black beans, blended in the food processor until smooth
15 oz can drained and rinsed yellow corn
3 chipotle peppers in adobo sauce, chopped
10 oz Colby Jack cheese, shredded

2 cups of pico de gallo (I bought mine prepared at my favorite grocery store)

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
